Cozy!

It is still hot here friends. HOT! I am so waiting for it to be cool. I am biting my nails waiting. I haven't decorated for FALL yet because I simply have a hard time when it is 100 outside.

I have put my wreath on my front door and my Fall mailbox cover. I usually like to bake a Fall treat, open my windows, clean and spruce, and decorate when I do my seasonal décor. Since it is still so hot I just haven't really wanted to yet. I will though!



I did make some yummy Carrot Pumpkin Muffins (Weight Watchers 3 SP) and a Cozy Delish Taco Bake (Weight Watcher 6 SP) for supper. I lit a candle and the aroma from the candle and Carrot Pumpkin muffins made me get a little more excited for Fall.



3 Ingredient Pumpkin Muffins Recipe here. Subbed Spice cake with Carrot Cake

Taco Bake Recipe

1lb lean beef (browned and drained)
1 can of drained corn
1 pack of low sodium taco season
1 can of diced tomatoes
1 can of black beans ( I did not use this to lower points)

Top with cheese. I topped one half with fat free cheese for me and the other regular for family.

I seen several recipes for this but I adapted it for my family and so I cam sharing what I did.

I put all this in a 9 by 13. Baked for 30 minutes covered with foil. I then topped with cheese and baked for 5 more minutes.

  3. We are getting our fall weather. It went from summer to smoke to cold and wind! I have been making lots of curries at my husband's request, and I'm going to make soup all next week.

  4. It would be hard to feel like fall with 100 degree temps! On the other extreme, it has hardly been out of the 40s here all week! Cold and rainy, but we are so thankful for the rain, we aren't complaining. 70s are our usual temps this time of year. The taco bake looks wonderful too :)

  5. I love your "Be Thankful" sign. Your food looks yummy too. We have had a wide range of weather lately from in the 40's to in the 80's in the past week or so. The trees are very much changing colors and it looks like fall around here.
