Harvesting and Storing Herbs

I showed you all a while back my herb container garden. It is doing so well. It is time to harvest some. I chose to perserve them due to not cooking heavy meals at the moment and I had a lot that I didn't want to go to waste.

I have researched, studied, and read on methods of storing herbs. I have spent quite a bit of time.

I chose to freeze certain ones. I put up parlsey and lemon thyme. Normally, I would dry thyme but due to time and humid conditons in my area I chose to freeze it this time.

I did a method with ice trays for the parsley because they are a soft herb. Then for the thyme I rinsed and let dry well. I put them stem and all in a freezer bag. After a week you can gently run a rolling pin on the bag and collect the leaves easier and discard stems. Put leaves in a jar and store in a freezer.

    Mint, Basil, Parsley, and Oregano.
    Now I know what to do with the extra. : )

  2. Great job on preserving your herbs! I wash, dry and shop my parsley up and then freeze it, I also do the same things with green onions. I dry oregano and thyme. Rachel and I are going to dry mint this year to make tea out of. Right now she is gutting it and brewing thee fresh leaves to make tea for us.

    I use a lot of herbs in my cooking, especially parsley, cilantro and mint.
    And I also use a lot of spices: nutmeg, cumin, paprika, laurel...
    They add flavor to the food and we use less salt.

  4. Hi, I like to hang herbs to dry. A favourite of mine is Lemon Verbena. I dry it for teas. It's also good for anyone suffering from indigestion. I dry Comfrey, Plantain and St John's Wort for salves. I normally just use my basil to make Pesto and then freeze that. Most other herbs I use fresh. :)
